OOLONG TEA CAKE is made using tea leaves from Ali Shan/ALI Mountain’s tea trees and then aged and compressed. It has a long tradition with tea farmers who discovered how a tea changes flavor as it ages. In humid climates the tea is baked or roasted every year or two to keep the tea dry. The changes through the seasons condenses the the vital nature of the tea, making it softer, warmer and sometimes slightly sour and sweet.
